whatever you want simmer soup
Cozy up with this easy, nourishing, comforting and SIMPLE soup!
Ingredients - Simmer Soup
4 T. - olive oil
2 medium - onions, diced
generous pinch - sea salt
3 - garlic cloves, thinly sliced
3 add-ins, 6-8 cups total:
1 - carrots, celery, leeks, potatoes, squash;
2 - lentils, beans, raw or cooked meat
3 - green vegetable like cabbage, kale; cooked meat if not using raw)
8-10 cups - stock or broth
Steps
In a large stockpot, heat oil over medium heat; sauce onions, garlic, and sea salt until tender, about 15 minutes.
Place add-ins into the pot (except greens) and add enough liquid to cover. Add more salt, bring to a boil, then reduce to a simmer.
Allow to simmer all day on the lowest burner setting, or in a crockpot.
Stir in greens when ready to eat, season as needed with more salt and pepper, a squeeze of lemon, etc.
The most important step, garnish it! Parsley, dill or chives, sour cream, crumbled cheeses, toasted seeds, lemon juice, pepper. etc and a hunk of bread.
